Veggie Quesadilla
Ingredients:
- 2 medium tortillas
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/4 cup bell peppers, thinly sliced
- 1/4 cup onion, thinly sliced
- 1/4 cup fresh spinach leaves
- Salsa, for dipping
- Optional: Sour cream, for dipping
Instructions:
- Heat a skillet on the induction stove over medium heat. Place one tortilla in the pan.
- Sprinkle half of the cheese on the tortilla, then add the bell peppers, onions, and spinach.
- Top with the remaining cheese and place the second tortilla on top.
- Cook until the bottom tortilla is golden brown, then carefully flip and cook the other side until golden and the cheese is melted.
