Veggie Quesadilla

Ingredients:

  • 2 medium tortillas
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup bell peppers, thinly sliced
  • 1/4 cup onion, thinly sliced
  • 1/4 cup fresh spinach leaves
  • Salsa, for dipping
  • Optional: Sour cream, for dipping


Instructions:

  1. Heat a skillet on the induction stove over medium heat. Place one tortilla in the pan.
  2. Sprinkle half of the cheese on the tortilla, then add the bell peppers, onions, and spinach.
  3. Top with the remaining cheese and place the second tortilla on top.
  4. Cook until the bottom tortilla is golden brown, then carefully flip and cook the other side until golden and the cheese is melted.
