Convection Oven Stuffed Sweet Potatoes
  • 2 medium sweet potatoes
  • 1 cup black beans, drained and rinsed
  • 1/2 cup shredded cheese (cheddar or Monterey Jack works well)
  • 1/4 cup salsa
  • 1 avocado, diced
  • 1/4 cup Greek yogurt or sour cream


Instructions:

  1. Pierce each sweet potato several times with a fork.
  2. Place sweet potatoes in the convection oven at 400°F and bake for 45 minutes or until soft and fully cooked.
  3. Once cooked, slice each sweet potato open lengthwise and gently fluff the inside with a fork.
  4. Fill each potato with 1/2 cup black beans, 1/4 cup shredded cheese, and a few spoonfuls of salsa.
  5. Top with diced avocado and a dollop (about 2 tablespoons) of Greek yogurt or sour cream.
