Convection Oven Stuffed Sweet Potatoes
- 2 medium sweet potatoes
- 1 cup black beans, drained and rinsed
- 1/2 cup shredded cheese (cheddar or Monterey Jack works well)
- 1/4 cup salsa
- 1 avocado, diced
- 1/4 cup Greek yogurt or sour cream
Instructions:
- Pierce each sweet potato several times with a fork.
- Place sweet potatoes in the convection oven at 400°F and bake for 45 minutes or until soft and fully cooked.
- Once cooked, slice each sweet potato open lengthwise and gently fluff the inside with a fork.
- Fill each potato with 1/2 cup black beans, 1/4 cup shredded cheese, and a few spoonfuls of salsa.
- Top with diced avocado and a dollop (about 2 tablespoons) of Greek yogurt or sour cream.
