Microwave Loaded Baked Potato

Ingredients:

  • 1 large russet potato
  • 1/4 cup shredded cheese (cheddar or your favorite)
  • 2 tbsp sour cream
  • 1 tbsp green onions, chopped
  • 1 tbsp bacon bits (optional)
  • Salt and pepper to taste


Instructions:

  1. Pierce the potato several times with a fork and microwave on high for 5-7 minutes, or until soft.
  2. Carefully cut open the potato, fluff the inside with a fork, and season lightly with salt and pepper.
  3. Top with shredded cheese, sour cream, green onions, and bacon bits if desired.
