Microwave Loaded Baked Potato
Ingredients:
- 1 large russet potato
- 1/4 cup shredded cheese (cheddar or your favorite)
- 2 tbsp sour cream
- 1 tbsp green onions, chopped
- 1 tbsp bacon bits (optional)
- Salt and pepper to taste
Instructions:
- Pierce the potato several times with a fork and microwave on high for 5-7 minutes, or until soft.
- Carefully cut open the potato, fluff the inside with a fork, and season lightly with salt and pepper.
- Top with shredded cheese, sour cream, green onions, and bacon bits if desired.
