One-Pan Taco Skillet
Ingredients:
- 1 lb ground beef or turkey
- 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 cup shredded cheese (cheddar or Mexican blend)
Instructions:
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat if needed.
- Add taco seasoning to the meat, stirring to coat.
- Stir in black beans, corn, and diced tomatoes (with their juices). Cook for 5-7 minutes until everything is heated through and well combined.
- Sprinkle shredded cheese on top, cover the skillet, and let cook until the cheese is melted.
Serve: Enjoy with tortillas, on top of microwaved rice, or as a filling for tacos or burritos!
