Microwave Veggie & Rice Stir-Fry

Ingredients:

  • 1 cup pre-cooked brown rice
  • 1/2 cup frozen mixed veggies (carrots, peas, corn, etc.)
  • 1 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 green onion, chopped
  • 1 egg, scrambled (optional)


Instructions:

  1. In a microwave-safe bowl, combine the brown rice and frozen mixed veggies.
  2. Microwave on high for 2-3 minutes, or until everything is heated through.
  3. Stir in the soy sauce and sesame oil for flavor. If you’d like to add extra protein, scramble an egg in a separate bowl and microwave it, then stir it into the rice mixture.
  4. Top with chopped green onions for garnish.
