Microwave Veggie & Rice Stir-Fry
Ingredients:
- 1 cup pre-cooked brown rice
- 1/2 cup frozen mixed veggies (carrots, peas, corn, etc.)
- 1 tbsp soy sauce
- 1/2 tsp sesame oil
- 1 green onion, chopped
- 1 egg, scrambled (optional)
Instructions:
- In a microwave-safe bowl, combine the brown rice and frozen mixed veggies.
- Microwave on high for 2-3 minutes, or until everything is heated through.
- Stir in the soy sauce and sesame oil for flavor. If you’d like to add extra protein, scramble an egg in a separate bowl and microwave it, then stir it into the rice mixture.
- Top with chopped green onions for garnish.
