Microwave Egg & Veggie Breakfast Burrito
Ingredients:
- 2 large eggs
- 1/4 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup fresh spinach, chopped
- 2 tbsp diced tomatoes
- 2 tbsp diced bell peppers (any color)
- 1 large tortilla
- Hot sauce (optional)
Instructions:
- In a microwave-safe bowl, whisk the eggs. Add spinach, diced tomatoes, and bell peppers.
- Microwave on high for 1 minute, then stir and cook for an additional 30 seconds to 1 minute, until eggs are fully set.
- Spread the cooked egg mixture onto the tortilla, sprinkle with shredded cheese, and microwave for an additional 10 seconds to melt the cheese.
- Roll up the tortilla, add hot sauce if desired.
