One-Pan Lemon Herb Chicken & Asparagus

Ingredients:

  • 1 large chicken breast (about 8 oz), sliced into two thin pieces
  • 1 bunch of asparagus, trimmed (about 1 cup)
  • 1 lemon, sliced
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme


Instructions:

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds, or until fragrant.
  2. Season both sides of the chicken breast with salt, pepper, and thyme, then add to the skillet.
  3. Cook chicken until browned on both sides and cooked through, about 4-5 minutes per side, depending on thickness.
  4. Add asparagus and lemon slices to the skillet. Cover and cook for an additional 5 minutes, or until the asparagus is tender and the chicken reaches an internal temperature of 165°F.


Serve: Enjoy with a side of microwaved quinoa or instant rice for a complete, healthy meal!
