One-Pan Lemon Herb Chicken & Asparagus
Ingredients:
- 1 large chicken breast (about 8 oz), sliced into two thin pieces
- 1 bunch of asparagus, trimmed (about 1 cup)
- 1 lemon, sliced
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
Instructions:
- Heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds, or until fragrant.
- Season both sides of the chicken breast with salt, pepper, and thyme, then add to the skillet.
- Cook chicken until browned on both sides and cooked through, about 4-5 minutes per side, depending on thickness.
- Add asparagus and lemon slices to the skillet. Cover and cook for an additional 5 minutes, or until the asparagus is tender and the chicken reaches an internal temperature of 165°F.
Serve: Enjoy with a side of microwaved quinoa or instant rice for a complete, healthy meal!
