Coconut Wrap Recipe
Ingredients
- 1 store-bought coconut wrap
- 1/2 cup kale, massaged with olive oil, salt, and pepper
- 2 tbsp nutritional yeast
- 1/4 cup alfalfa sprouts
- 1 tbsp mustard (your choice of flavor)
- 2 tbsp hummus
- 3-4 pickle slices
- 2 tbsp thinly sliced red onions
- Optional: Marinated portobello mushrooms (find several marinade recipes in our catalog!)
Instructions
- Prepare the Kale:
- In a small bowl, rub the kale leaves with olive oil, a pinch of salt, and pepper until softened and tender. Set aside.
- Lay Out the Wrap:
- Place the store-bought coconut wrap on a clean, flat surface or plate.
- Spread the Base:
- Spread the hummus evenly across the center of the coconut wrap, leaving a little space at the edges for easy rolling.
- Drizzle or spread mustard over the hummus.
- Add Layers of Flavor:
- Sprinkle nutritional yeast over the hummus and mustard for a cheesy, savory flavor.
- Layer the Veggies:
- Place the massaged kale on top of the base layer.
- Add alfalfa sprouts, red onions, and pickle slices for a crunchy, flavorful bite.
- Optional - Add Portobello Mushrooms:

- Roll It Up:
- Gently fold the sides of the wrap inward and roll tightly from one end to the other.
