One-Pan Garlic Butter Shrimp & Veggies

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper (any color), chopped
  • 2 cups fresh spinach
  • 2 tbsp butter or olive oil
  • Salt and pepper, to taste
  • Fresh herbs (like parsley, basil, or thyme), chopped (optional)


Instructions:

  1. Heat the Pan: Place your induction pan over medium heat and add butter or olive oil. Let it melt and heat up.
  2. Cook Shrimp: Add minced garlic and shrimp to the pan. Stir and cook until shrimp turns pink and is opaque (about 2-3 minutes per side). Remove shrimp from the pan and set aside.
  3. Sauté Vegetables: Add zucchini, bell pepper, and cherry tomatoes to the pan. Cook until vegetables are tender (about 5-7 minutes), stirring occasionally.
  4. Wilt the Spinach: Add the spinach to the pan and stir until it just begins to wilt.
  5. Season: Add shrimp back to the pan, season with salt, pepper, and any herbs you like. Stir everything together, cook for another minute to blend flavors.
  6. Serve and Enjoy: Serve warm as a main dish, or pair it with rice or crusty bread.
