Creamy Spinach & Tomato Pasta

Ingredients:

  • 1 cup pasta of choice (penne, rotini, etc.)
  • 1/2 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 clove garlic, minced
  • 2 tbsp cream cheese
  • Salt and pepper to taste
  • Optional: Parmesan cheese for garnish


Instructions:

  1. Cook pasta on the induction stove in boiling water until al dente. Drain and set aside.
  2. In the same pan, add a bit of olive oil (optional) and sauté the minced garlic until fragrant, about 30 seconds.
  3. Add cherry tomatoes and spinach, cooking until the tomatoes soften and spinach wilts.
  4. Stir in the cream cheese until it melts and creates a creamy sauce.
  5. Add the cooked pasta back to the pan and mix everything together, seasoning with salt and pepper to taste.


Serve: Top with a sprinkle of black pepper and Parmesan cheese if desired. Enjoy this simple and creamy pasta dish!
