Creamy Spinach & Tomato Pasta
Ingredients:
- 1 cup pasta of choice (penne, rotini, etc.)
- 1/2 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 clove garlic, minced
- 2 tbsp cream cheese
- Salt and pepper to taste
- Optional: Parmesan cheese for garnish
Instructions:
- Cook pasta on the induction stove in boiling water until al dente. Drain and set aside.
- In the same pan, add a bit of olive oil (optional) and sauté the minced garlic until fragrant, about 30 seconds.
- Add cherry tomatoes and spinach, cooking until the tomatoes soften and spinach wilts.
- Stir in the cream cheese until it melts and creates a creamy sauce.
- Add the cooked pasta back to the pan and mix everything together, seasoning with salt and pepper to taste.
Serve: Top with a sprinkle of black pepper and Parmesan cheese if desired. Enjoy this simple and creamy pasta dish!
